Ate Recalled Alfalfa Sprouts? What Symptoms Should You Watch For?

If those Calco or Everything Sprouts alfalfa sprouts are still in your fridge, throw them out. You can't rinse them safe, because these bacteria grow inside the sprout, not on the surface. If you already ate them, watch for one to two weeks: diarrhea, stomach cramps, and fever. Get medical care early if the diarrhea turns bloody or you notice you're urinating less.

The FDA and CDC named the culprit on August 21, 2026: alfalfa sprouts from a single Minneapolis grower, sold as Calco and Everything Sprouts, tied to a multistate outbreak of Shiga toxin-producing E. coli and Salmonella. If a container of either brand is in your fridge, throw it out or return it. Don't try to salvage it with a good wash. That's the one instinct this pathogen defeats.

Why a rinse won't make them safe

The contamination doesn't sit on the surface where water can reach it. It starts as a few bacteria on the seed, and sprouting does the rest. Warm, humid, and nutrient-rich, a sprouting jar is close to an incubator, and even trace contamination can multiply thousands-fold within a day or two. As the sprout grows, the bacteria work their way inside the tissue and settle into a biofilm that shrugs off disinfection.

Washing takes off only a small fraction, and it can't touch what's internalized. E. coli has been cultured from the inner tissue of sprouts after the outside was rinsed clean. Even the industrial-strength seed treatments growers use don't reliably finish the job, which is why sprouts keep causing outbreaks, more than 60 worldwide since 1988, alfalfa most often. Only thorough cooking reliably kills these germs. If you're young, over 65, pregnant, or immunocompromised, raw sprouts are worth skipping entirely, outbreak or not.

The illness shows up late, and in stages

This is why you can't shrug off the sprouts you already ate. STEC symptoms typically appear 3 to 8 days after exposure, long after the meal: stomach cramps and diarrhea that often turns bloody. Salmonella brings fever, cramps, and diarrhea that usually clears in about a week. Most people recover on their own.

The danger is the complication that arrives later. Hemolytic uremic syndrome (HUS) damages the kidneys, and it develops in roughly 10 to 15% of E. coli O157 infections. It usually strikes 5 to 14 days after the diarrhea starts, most often around a week, when the sprouts are a distant memory. The risk runs highest in children under 5, and it's dangerous in adults over 65. Watch for diarrhea that worsens or turns bloody, vomiting, and passing little urine. Early diarrhea here isn't just food poisoning to wait out.

The right early move, and the two that backfire

If illness comes, the mainstay is fluids. In observational studies, getting intravenous fluids early, during the window before HUS declares itself, has been linked to less kidney injury and shorter hospital stays, though no randomized trial has confirmed it. So seek care promptly rather than toughing it out at home, so the fluids can start if things head the wrong way.

Two common instincts make it worse. Reaching for an anti-diarrheal like loperamide in the first few days roughly triples the risk of HUS; slowing the gut seems to keep the toxin in longer. For E. coli, antibiotics are the other trap. The evidence leans toward harm: one small cohort of children found antibiotic-treated kids developed HUS at roughly 14 times the rate of untreated kids, and a 2025 pooled analysis of 23 studies found antibiotics modestly raised HUS risk overall, likely because stressing the bacteria makes them release more toxin. The reflexes that feel right for a stomach bug, an Imodium or a course of antibiotics, are exactly the ones to avoid here.

For alfalfa sprouts the safety math is unusually clean. Because the contamination lives inside the sprout, no rinse protects you. Throwing out the recalled product and cooking sprouts are the only reliable defenses. If illness does come, the evidence favors early fluids over the reflexive anti-diarrheal pill or antibiotic. Confirmation of any HUS cases in this outbreak and the specific lot codes still being worked out would sharpen the picture, but none of it changes what to do with the container in your fridge tonight.
